
Ingredients
- 1 onion finely chopped
- 1/3 cup olive oil
- 2 cloves garlic (Crushed)
- 1/4 teaspoon cloves
- 3/4 large brown lentils
- small pinch of salt
- Small pinch of black pepper
- water
- 1/4 teaspoon cumin
- 1/4 teaspoon ground coriander
Step By Step
- Saute the onions in the olive oil until slightly softened.
- Add garlic, cloves and lentils and stir to blend.
- Pour on water to cover and bring to the boil.
- Cover, reduce heat and simmer until tender (From 1-2 hours depending on lentils), add more water if necessary.
- Drain and season with salt and black pepper to taste.
- Add the cumin and coriander.
- Mash the lentil mixture in a mortar or puree in the blender.
- Serve garnished with chopped parsley, black olives and lemmon or tomato wedges.
